Overview

Located in a 7,300 square foot warehouse near Union Station in Washington, D,C., Union Kitchen is a culinary incubator that supports 55 foodie startups. Union Kitchen provides a low-cost, low-risk, full-service kitchen for culinary entrepreneurs to grow and establish their ventures. The facility near Union Square is at capacity, occupied by food producers, caterers and food truck owners. [8] Members receive catering opportunities, distribution services, access to partnered businesses, marketing support, and facility maintenance. A few of the incubator's success stories from the NoMa facility include Capital Kombucha, DC Patisserie, and Glover's Pepper Sauce. [7] Currently Union Kitchen plans to open a new facility in Ivy City with a new 24,000-square-foot space that will accommodate around 70 new members at 1369 New York Ave. NE. The new facility will triple the incubator's space and house entrepreneurs from small/medium-sized businesses that will employ around six people each. [1] 

History

Union Kitchen was founded in December of 2012 by Jonas Singer and Cullen Gilchrist. Jonas and Cullen decided to open the Kitchen when they were trying to expand their Virginia restaurant, Blind Dog Cafe, and had a lot of trouble finding an affordable kitchen that would serve their needs. They came up with an idea to open a kitchen that would allow them to expand their own business while also helping other entrepreneurial foodies grow their own ventures. [9] After just over a year of opening, Union Kitchen received nearly 450 applications from interested culinary entrepreneurs. [7] With the current expansion, The new Ivy City facility will be two stories with event space, a cafe, and a market where members can sell their products. There will also be kitchen space for mid-sized ventures and potentially a kosher-only kitchen, a USDA-certified meat prep kitchen, and a vegan kitchen. [7]
